AC Butchery's reputation has been built on a solid foundation of good, old fashioned food with a modern twist – including more than 18 varieties of Gluten Free gourmet sausages to choose from, ranging from the classic pork and fennel or chicken and rocket to, Wagyu Beef Sausages to the brand new Pork, Prosciutto, Parmiggiano and Parsley.

More than anything, Angela and Carlo pride themselves on providing customers with top quality produce, the best products in the country and, importantly, the know-how to prepare it. Their vast range includes: free range game meats, aged beef products, free range poultry, born and bred free range pork from Bundawharra, care-free dining roasts ideal for any dinner party, Ready-To-Go and Ezy BBQing meats.

Family Tradition: inheriting the legacy of the founders Angela and Carlo, son Arnaldo and nephew Joe - are now managing the day to day running of the shop. But you often see Carlo in the Marion Street shop that has been part of his life for so long.

AC Butchery has spiced up the local Aussie butcher, achieving fame over the last two decades for sexy-ing up the simple sausage and transforming it into an edible art form.

For decades the family business had passionate foodies Angela and Carlo (AC) Colaiacomo at the helm, bringing food alive to five stores around Sydney including Leichhardt, Rose Bay and Surry Hills. The Coaiacomo's ran the business with family values and an ingrained love of food at the heart of their philosophy.

Angela and Carlo first opened their doors at Marion Street, Leichhardt in 1987, constantly creating new and exciting products from revolutionary ideas for gourmet presentation of meat and other products. They later opened other shops in Rose Bay and Surrey Hills.

The business at present has a factory and also AC Gourmet Poultry with the head office in Marion Street, Leichhardt.

The head office at Marion Street is more than just a local butcher - walking inside is like entering a world-class Italian “marcellaria” (Butcher) – with knowledgeable staff surrounded by handmade smallgoods, imported Italian Prosciutti, and an extensive range of gourmet condiments.

In 2002 AC Butchery was awarded the most prestige food award, a Jaguar Award, for Innovation in produce, for the Australian Gourmet Traveller. The same year, AC Butchery was recognised in the inner west for a Small Business award in the category for Best Butcher, as voted by their very own customers. The years 2004, 2005 and 2006 also saw AC Butchery win the Inner West Small Business Award and a Gold Award as well. The Norton Street Plaza store snatched the coveted retailer of the year in 2001 and 2002, helping build the butcher’s profile in the Inner West.

Customer service is always a focus, from supply of very large orders to some of Sydney’s most respected restaurants and caterers to a simple request from a person off the street, we endeavour to supply all customers with exactly what they need.

Before anything is put out on sale our managers test the product for the best taste and quality for our customer’s satisfaction and taste buds.

AC Butchery aims for complete customer satisfaction and our service levels are high to match this expectation. With such a large and diverse customer base, we have structured staff levels to match these needs with some staff devoted to handling the larger orders for restaurants and caterers and remaining staff looking after customers who come to our stores. AC Butchery has a qualified butchers, sausage makers, and even gourmet Chefs as their loyal staff who are ready to give the best cooking instructions for any type of roast, sausage or meat products purchased.
